If you are not staying at Chablé Resort, you can still dine at Jorge Vallejo’s restaurant. We visited while returning to Mérida from Uxmal. It’s a bit out of the way, but worth it for an incredible foodie experience. The service is impeccable, the cocktails amazing and the food adventurous and very good.

We really loved our experience at Ixi'im; we had the tasting menu and everything was beautifully crafted with high quality ingredients. There were some dishes we did not like such as the sweet potato with chocolate sauce, but then others like the salad and the scallop dish were amazing. It was all very interesting and fun to try. The venue is gorgeous and the staff lovely which made for a very special Christmas dinner
WOW! Not good words to describe the beauty of these surroundings! Food was excellent, service fabulous, but the view wins.
The place is magnificent. Food is good but not superb. It is worthwhile goibg there and or staying at the Hotel.

Perfection, the Mexican Gastronomy at its utmost best, showcased by acclaimed chef Jorge VALLEGO from Quintonil in CDMX, one of the worlds 50 best. The decoration, service are as well exceptional.
As a restaurateur, it kills my expectations, they served so basic food.....
