My wife and I had our anniversary here recently, and left very happy. The owner personally met us at the door to wish us a happy anniversary, and escorted us to our table. We shared a lobster salad out waitress recommended, and it was excellent. When our entrees came out, my wife's steak was more done than she had ordered but it was just a mix up at the window, and was fixed for her in less than 30 seconds. Despite having watched every Gordon Ramsey show, I'm not an expert on food. All I can say is I was very happy with my meal, and that we plan to go back. Carlos' Bistro is an excellent place to celebrate your special event!

I brought my family for my wife's 40th birthday last night. Right away, Carlos came out to meet us parking our car to wish my wife a happy birthday. Never had an owner do this anywhere else, so that was great start to an even better evening. The atmosphere is beautiful inside. The service was impeccable by Liz. She was so professional, kind and friendly. We never had to ask for anything one time. She was very attentive. The food came out and it looked like art. Amazing presentation, I almost felt guilty for eating it. Taste was phenomenal, we had the Tomahawk Ribeye, which was cooked to perfection, shrimp bruschetta, and chicken parmesan for the kids. We finished the night by bringing our own cake. I thought it was very cool and thoughtful, Carlos and his team not only cut our cake and brought it out for us, they added berries, mint and powdered sugar and dressed it up fancy for us. The whole night Carlos came and talked to us and our kids, told us some great stories and made the night fun and interesting. Thank you Carlos to you and your entire staff for a memorable night. We will be back for sure to try more amazing food.

We celebrated Valentine's Day at Carlos Bistro. The food was delectable. The service was wonderful. I highly recommend this restaurant, especially if you want a fine dining experience!

The Omelette Parlor was amazing! We had eggs, pancakes, sausage, bacon and a Belgian waffle. The waffle was one of the best I have ever had. Our server was attentive and very pleasant. The atmosphere is unique, charming and very pleasant. It is an historical building with some interesting history. The bathrooms were clean. We will most likely return when we are in the Springs again!

Carlos' Bistro is always a phenomenal experience! The food is fantastic and service from Carlos and the staff is friendly and personal. They do a good job with COVID mitigations and are offering half price bottle of wines for the rest of the year. Had the Paella which was loaded with shrimp, scallops, mussels, clams, calamari AND chorizo. Wow so good!
