Spent three nights here. The room had a good view down a narrow street. The rooftop restaurant has good food and good service and the hotel arranged an excellent wine tasting for our party.

We spent 3 nights in this "4" star hotel. The first thing to comment is the shower. Mold at the bottom and the water was absolutely insufficient to take a proper shower, that in the end, makes you waste even more water than needed trying to wash yourself. Moreover the temperature of the water goes from warm to cold every 10 seconds. The cupboard had just 4 hangers, so if you are with your partner, don't bring more than 2 pieces of clothes each that need to be hanged. The safe is quite small, so it wont fit a laptop for instance. If you don't want/can't drive, there is no easy way to get to the sea, as the busses are late or canceled without notice and leave either at 7am in the morning or after lunch where you have only 3 hours before having to return. I think that a little shuttle wouldn't hurt in a "4" star hotel. Conversano is really pretty and one of the good aspects of this hotel is the location, right in the old center, but after a morning of walking around, you have basically seen everything. For a place that reaches nearly 40 degrees in the summer, to not have a pool or even give limited access to the spa is a bit upsetting. The spa is really basic though, the water jug is in poor plastic that got ruined over the time, and accessing the spa also the day after, we noticed that they didn't even change the water in the jugs. Lastly, breakfast is very basic and the croissants really are the worst I have ever had. The restaurant, as cute as the terrace is, has absolutely no view. The options are very limited and most of them flavourless. I suggest the meat that is the only really delicious plate. The waiters were friendly and professional. Except for the porter that was really friendly and helpful, the staff wasnt really prepared. The only other good aspect of the hotel is the old brick walls which is very cute. Based on our experience, the 4 stars are absolutely not deserved. We wouldn't come back here again unfortunately.

The night we arrived in Conversano, our hotel had booked us into the gorgeous little rooftop restaurant for an introduction into Italian (and Apulian) cuisine. Having spent most of the afternoon travelling and learning to drive on the wrong (right) side of the road, we were in need of some Italian hospitality and boy, were we not disappointed. Over a romantic, candlelit table for two (mum and I), plate upon plate of ridiculously amazing food was set in front of us and we ended up so full I could barely shuffle back to the room afterwards. They kicked off the fare with two platters of typical Puglian appetisers. On one, a gorgeous swordfish ceviche with tangy fresh lime juice and tart red peppercorns; a pearl barley and cucumber salad; and a fresh seafood salad of prawns and octopus served in a clamshell and squeezed with lemon. The second, deep fried courgette flowers; a cheese souffle; and aubergine stuffed with minced pork and vinegary slices of red onion, all drizzled with local balsamic vinegar. Following this, in typical Italian form, was a primi of pasta - handmade orrecchiette pasta in a fresh tomato sauce made with the tastiest olive oil - small bites stuffed with softly roasted warming cherry tomatoes. Then for the secondi, we had grilled sea bream instead of the veal and after that, vanilla pannacotta with tangy blackberries and fruit coulis. We coupled this with a dry Apulian red and lashings of self-congratulation. And a reduced appetite for the rest of the holiday.
