I love this mix and match idea for a noodle bar! I got the Sizzling Garlic with Biang Biang noodles. Great flavor and perfect heat for me. It was a lot of oil, though, and the noodles were hard to separate from each other (but we did get it to go so that may have been the reason). I would have loved more garlic, to be honest!

On a quest to find somewhere to eat, we stumbled upon Noodleosophy. I had saved the San Mateo location to try, but since we were in the area, decided the try the Cupertino spot. I got the Meat Paste with Biang Biang Noodles. The paste itself was a little oily and salty, but after mixing everything together, it was better. The cucumber and corn bring a fresh taste and a nice crunch. The noodles were chewy and thick. We also got the cucumber salad. Unfortunately, there wasn't much garlic flavor to it. Overall not a bad experience. The shop is located in what seems will be a shared food court space. There was only one other open spot when we were there.

I've been looking for a place that sells hand-pulled noodles ever since I tried Xi'an Famous Foods in NYC!! So happy that I found this place and it's not too far from me! I ordered the Sizzling Garlic Noodles with the Biang Biang noodles and added shredded pork on top. It was a tough decision between that and the Spicy Cumin Lamb Noodles, but I went with the garlic noodles as a starter. Wow, was I impressed! Like some reviews mentioned, the noodles were bunched up at the bottom by the time I got home (20 min drive back to SJ), but if you microwave it with a wet paper towel for a bit - good as new! I love the thickness and chewiness of the noodles, so delicious and holds all the garlick-y goodness together. The chili sauce was really flavorful and packs some heat - I ordered mild spicy, because I can't handle numbing spice LOL. The noodles also come with broccoli, but the pieces are HUGE; I wish they would've cut them into smaller bite-sized pieces. I would love to come back and dine in-person (after COVID-19). I bet the noodles would be even more AMAZING served hot and fresh! Great addition to the food court and they're 100% COVID-19 compliant! :)

I ordered the pickled veggie and pork biang biang noodles, strong spicy, dry style. The sauce, pork, and pickled veggies coating the noodles were absolutely delicious - a great balance of savory, salty, tart, and a little spicy. The noodles, however, were a little lackluster since they did not have the signature 'qq' chewy texture. The texture was more similar to a fresh pasta, which isn't bad, just not the type that I prefer.
