Traditional Vinegar of Modena is a unique reality in the world in the field of acetic-based condiments. Unlike vinegar, which comes from an alcoholic liquid, it is obtained directly from grape juice. The must of typical grapes cultivated for centuries in the area of origin, cooked in an open vessel and with direct fire, is placed in barrels of different woods and of decreasing capacity, grouped together in series such batteries, rattles, ripening and aging tools. After at least twelve years of racking from the smallest barrel of each battery, a few liters of product are taken and must be subjected to the judgment of a commission made up of five expert tasters who assess whether the sample examined has reached the characteristics of typicality. The product that has completed 25 years of aging can bear the inscription "Extra Vecchio"​.
