Scottish meat pies, potato scones, canned haggis, frozen duck breast. I asked how to cook the duck. I thawed the frozen duck in the refrigerator, opened the package has a generous size duck breast, I took a chef's knife and cut it into four portions, placed the three other portions in a airtight storage back in the refrigerator. On the burner, set to one, the minimum heat setting, seasoned the duck breast with salt and pepper, placed in heated pan skin side down, covered, let cook slowly for ten minutes, then turn over and cook for another five minutes. The meat was pink and juicy. Duck breast and all lean meat will easily overcook and become dry. But it was juicy. Hint is when you see juices coming out of the meat in the pan, it's time to pull of off the pan. Serving suggestion, slice, I topped mine with sour cherry jam. It was very good. And I still have three more portions to do.
