Iwao Soy Sauce Brewery : Upon your visit to Matsukage-cho let's not to miss Iwao Soy Sauce Brewery just a few blocks away from the coast. The brewery is a long-established business established in early Meiji 7th ( 1875 ) and continue on with their original method of brewing to this day. Their products are known as Jigamiiwa Soy Sauce. The product was invented by the founder of this brewery who grew up in this area next to the sea based on profound knowledge of sea food culture of local life. The sauce has natural sweetness extracted from its own natural ingredients matured in a co-98urse of two years of fermentation. The savory and rich flavor of this product was originally made to bring out the best of sea food dishes. The sauce is made of selected ingredients and careful handling for quality maintenance in the brewery. In such way the completion of the product contains large amount of minerals which attributes to its pleasant tastes served in many different places around Echizen province. The taste developed in Iwao Clan has been passed on from generation to generation using the same storage space called Kura in which their original yeast fungus continue to reproduce itself. 昔ながらの、醤油作りをされてます。 美味しい醤油は味が2種類。 あっさり目と甘め 好みで使い分けるのも良いですね

スッキリした、刺身醤油が欲しかったんですが、この地域のお醤油は違うようです。 [チガミイワ醤油さしみ]を購入さしましたが、アミノ酸や甘味料が添加された甘い醤油でした。この辺りの宿や飲食店ではそんなことはなかったので、意外でした。 和え物やお浸しなどに使うことにしました。

ここの醤油は美味しいです。 毎回大阪から買いに来ます。 おすすめです。 煮物とかに使うより、お刺身や焼き魚、お付けもの、たまごかけご飯に使ってます。
