Top quality ingredients. Their sauces are complex in flavor. Their soups stay true to the roots but elevated. Their tortillas, rice, and beans need some work. But overall such a wonderful upscaled restaurant.

We recently moved back to Lincoln and were so happy to discover Copal. We've been ordering curbside almost once a week during the pandemic. Yes, sometimes wait times can be longer than the pick-up time says. Not sure why that is...but I'm guessing having to completely change the way your restaurant operates is not easy or smooth. Now we plan for an extra 10-15 minutes or just wait until we get the text. Bottom line is the staff is ALWAYS kind and welcoming. They called and left a message to ask something about a to-go order to make sure they had it right. We're super happy they're around and want to help them stay around. The food is awesome and I'm thrilled about all the vegetarian options. Our faves: huarache with eggs and enchiladas mole with veggies.

I want to say Josh is the Best Server an Management in this place.. He totaly went out of his way to make sure we were feed an felt welcome! An he welcomed the guests that came to see \Jorrianne the Coffee Physic \ with \B107.3 Radio \ Joe an Gina !!
