I was recommended this place by a local, and wow, what a recommendation! An amazing selection of flavours (some very unusual but really interesting!), all made on site and each flavour I tried better than the last. So good I went back the next day to try more. Also the best selection I've seen in Seville of dairy free options (I went with a vegan friend). A bit off the beaten (tourist) track but definitely worth the trip. There's also a really nice park beside the shop if you want to enjoy your ice cream while taking a walk.
