Toledo is like other typical Euro day-trip tourist towns (eg Seville, Mt St Michel, et al), with all the shops/restaurants catering to the bused in crowds aligned along a few streets leading to the main cathedral/square. To find something better, you have to search a little harder. Skala is a great local bistro/tapas restaurant. It exists due to social media; that is, out of the way with limited foot traffic, so it's dependent on word-of-mouth. Crowd is a mix of locals stopping by for a snack/drink and tourists who have done their research. Very casual, nothing fancy, with really fresh food and excellent, simple presentation.
